I saw every episode of the Monkees repeatedly when I was a little girl (7 years old? I think I had a tiny crush on Mike Nesmith back then. Or the closest I ever came to a crush on a guy - outside of Gregory Peck and Kermit the Frog *don't judge*). But I don't recall ever having seen this; I could be wrong.
In hindsight, having a(faux) "mainstream pop band" sing a Christmas song entire in Spanish seems at least a couple of decades or more ahead of it's time.
I forgot to respond to your comment about the Monkees song, but basically I think you're right, that it's something that came from them rather than a producer. Back in those days everybody recorded the same songs (I've seen enough of my aunts records from that era to know that once a song became a hit, all and sundry would do their own version.) And I don't recall seeing or hearing this particular Christmas song on any of my aunts old albums.

So beautiful! If I recall correctly it was tagged on at the end of one of the episodes. Every year at Christmastime, I dig out my Monkees complete collection just to listen to this song, You have excellent taste. :)
